2/3 cup diced cucumber
1 cup feta cheese, cubes
1/2 cup sliced kalamata olives
Fresh dill
Dressing Ingredients:
3 tablespoons fresh lemon juice
1/2 tsp salt
1/2 tsp pepper
5 tbsp olive oil
1 tbsp honey
Directions:
Combine orzo, onion, spinach, tomato, cucumber, olives and fresh chopped dill in a large bowl. In a separate bowl, mix dressing ingredients. Pour over salad in large bowl, toss to combine. Gently stir in feta cheese. Refrigerate until needed.

Ingredients:
4 large tortillas
2/3 cup whipped cream cheese
1 tbsp dry ranch powder
1/2 cup thinly sliced red bell pepper
1/2 cup thinly sliced carrots
1/2 cup thinly sliced yellow bell peppers
1/2 cup baby spinach leaves
1/2 cup shredded purple cabbage
1/2 cup cooked, shredded chicken (optional)
1 tb freshly chopped parsley
Directions:
Mix together cream cheese and ranch powder. Spread mixture evenly over tortillas, leaving a 1 inch border on all sides. Lay out vegetables in rows before topping with shredded chicken. Roll each tortilla tightly and cut crosswise into pinwheels.

1 medium cantaloupe, cubed
1/4 lb thinly sliced prosciutto
20 small mozzarella balls
Parsley
Balsamic Reduction
Directions:
Thread prosciutto, mozzarella and melon cubes onto small cocktail skewers. Sprinkle with parsley and drizzle with balsamic reduction of your choice.

2 cups milk chocolate chips
1/2 cup heavy whipping cream
1 package graham crackers, quartered
1 cup marshmallow creme
14 oz milk chocolate for dipping
Directions:
In a small saucepan, bring cream to a boil before pouring over chocolate chips. Whisk until smooth and cool to room temperature. Spread mixture over half of the graham crackers and spread the other half with marshmallow cream. Place two halves togethers. Melt dipping chocolate according to package. Dip s’more halfway in and place on waxed paper-lined baking sheets until chocolate is set.
