Each year when November rolls around we find ourselves taking an extra moment to pause and reflect on all it is that we’re grateful for. It’s a time to give thanks for good food, great company and the best ginger beer around. Earn the title of “favorite friend” at this year’s Friendsgiving feast when you show up with one of these delectable desserts along with a pack of Barritt’s Ginger Beer, of course.
Pumpkin Pie Truffles via If You Give a Blonde a Kitchen
Ingredients:
1/4 c. Cream cheese
2 tbsp. Confectioners’ sugar
1/3 c. Pumpkin puree
1 3/4 c. Graham cracker crumbs
1/2 tsp. Pumpkin pie spice
1/2 tsp. Cinnamon
10 oz. White chocolate
Directions:
Mix together the cream cheese and confectioners’ sugar until creamy. Beat in pumpkin puree before adding graham cracker crumbs, pumpkin pie spice and cinnamon until combined. Refrigerate dough for at least three hours. Roll chilled dough into one inch balls and place on a parchment-lined cookie sheet. Chill for 30 more minutes. Melt the white chocolate before dipping the truffles and placing back on the baking sheet. Sprinkle with additional crushed graham cracker crumbs and cinnamon.
Chocolate Turtle Apple Slices via Mom Loves Baking
Ingredients:
2 Fuji apples
3 1/2 c. Chocolate chips
1 tbsp. Coconut oil
1 c. Caramels, melted
Chopped pecans
Popsicle sticks
Directions:
Slice apples into half inch pieces and insert popsicle stick into the bottom of each slice. Melt chocolate chips before stirring in coconut oil until smooth. Dip apple slices into the chocolate and place on parchment lined cookie sheet. Melt caramels until smooth and drizzle melted caramel over the chocolate, sprinkling chopped pecans overtop. Refrigerate for an hour or until chocolate and caramel have set.
Pecan Pie Praline Bark via The Domestic Rebel
Ingredients:
20 Honey graham crackers
1 c. Butter
1 c. Brown sugar
1 tsp. Vanilla extract
1 1/2 c. Chopped pecans
Directions:
Preheat oven to 350 degrees. Line a baking sheet with tin foil and spray with cooking oil. Place graham crackers across the surface area of the pan covering it completely. Heat the butter and brown sugar over medium heat, bringing to a boil for two minutes while stirring constantly. Add the vanilla extract and chopped pecans before pouring overtop of the graham cracker sheet. Quickly spread the mixture around to evenly coat the graham crackers. Bake for 10 minutes or until the mixture bubbles. Once cooled, break apart into pieces.
