When your feet hit the sand and the ocean breeze blows through your hair, it's impossible not to have a permanent smile plastered across your face. With the arrival of summer vacation comes endless opportunities to hit the beach for a day of sand, sun and our personal favorite, snacks. You see while some may have sunscreen and a towel at the top of their must-haves list, serve us a ginger beer cocktail alongside some beach day bites and we're set for some fun in the sun. Below you'll find our beach day essentials in the form of simple, healthy, on-the-go recipes which just so happen to pair perfectly with our favorite shake and take cocktails.
Snickerdoodle Energy Bites via Simply Quinoa
Ingredients:
1 c. Dates, pitted
1 c. Cashew pieces
2 tbsp. Chia seeds
2 tbsp. Coconut oil
1 tbsp. Cashew butter
1 tbsp. Maple syrup
1 tbsp. Cinnamon
1-2 tbsp. Water (if needed)
1 c. Quinoa puffs
Directions:
Combine dates and cashews in a food processor until they resemble a coarse sand. Add in coconut oil, cashew butter, maple syrup and cinnamon, processing until a dough forms. If needed, add in water until the dough sticks together. Pulse in the quinoa puffs before forming into 1" balls. Place on a parchment lined plate and freeze for one hour.
Pesto & Turkey Cucumber Roll Ups via Ambitious Kitchen
Ingredients:
3 Cucumbers
1/4 c. Basil pesto
6 slices Mozzarella cheese, thinly sliced
6 oz. Deli smoked turkey breast, shredded
1 Bell pepper, thinly sliced
1/2 c. Spinach, shredded
Salt & Pepper
Directions:
Use a vegetable peeler to slice cucumbers lengthwise. Place the slices on parchment paper and pat dry. Evenly spread one teaspoon of pesto on each cucumber slice before distributing cheese, turkey, bell pepper and spinach on each. Top with salt and pepper. Roll up and add a toothpick through the center.
Lemon & Blueberry Greek Yogurt Bites via Evolving Table
Ingredients:
1 c. Lemon Greek yogurt
2/3 c. Plain Greek yogurt
2 tbsp. Honey
1 tsp. Vanilla
1 1/4 c. Fresh blueberries
Directions:
Combine yogurt, honey and vanilla, mixing until combined. Add in blueberries before distributing evenly between 12 lined cupcake cavities. Freeze for at least four hours.
