Since 1887, the legend of Punxsutawney has held strong. Each year when February 2 hits, we’re so desperately lusting after warmer weather that we find ourselves peeled to the TV while wondering whether the groundhog will indeed see his shadow. And regardless of whether you believe in the legendary animal or not, it’s hard not to let the curiosity creep in. So no matter whether we’re in for six more weeks of winter or finally get to welcome the start of spring, these Groundhog Day sips are the perfect cocktails to sling.
Pineapple Ginger Punch via The Almond Eater
Ingredients:
1 c. Fresh pineapple
3 tbsp. Barritt’s Ginger Beer
2 oz. Tequila
1 Rosemary sprig
Club soda
Directions:
Blend the pineapple in a blender until juiced. Combine pineapple juice, Barritt’s Ginger Beer, tequila and rosemary in a cocktail shaker. Top off with the club soda and shake until combined. Garnish with a rosemary sprig.
Ginger Beer Lime Rickey via Town & Country Magazine
Ingredients:
4 c. Barritt’s Ginger Beer
1 c. Club soda
3 tbsp. Lime juice
1/4 c. Grenadine
Lime rounds
Maraschino cherries
Directions:
Combine Barritt’s Ginger Beer, club soda, lime juice and grenadine in a pitcher. Stir until combined and distribute between four ice-filled glasses. Garnish with a lime wheel and maraschino cherries.
Hibiscus Berry Aperol Mule via Salt & Wind
Ingredients:
6 oz. Raspberries
1 c. Water
1/3 c. Cane sugar
1/2 oz. Hibiscus tea
1 1/2 oz. Tito’s Vodka
3/4 oz. Hibiscus berry syrup
1/2 oz. Aperol
1 1/2 oz. Barritt’s Ginger Beer
1 Lime
Directions:
Combine raspberries, water and sugar in a small saucepan and bring to a boil. Once boiling, remove from the heat and let steep for ten minutes. Add the tea and let steep for an additional seven minutes. Strain the mixture and set aside. Combine Tito’s Vodka, Aperol and hibiscus berry syrup in a glass. Top with Barritt’s Ginger Beer and garnish with a lime twist.
